张洪小简介 – 

張家莊庄主——张洪,华裔,南洋年过半百老伯,别号龟毛老土怪。两鬓斑白,两眼炯炯,触觉灵敏,手扶老铁马,为的就是寻找马来西亚独有特产;误打误撞找到了最高品质的高山文冬姜,从此对它爱不释手。

 

本着对生命一种最初衷的热诚,庄主展开了一段漫长的寻根之旅,花了10年光景,终于找到了一份马来西亚独有的特产《高山文冬姜》,这份只有彭亨文冬区仅有的道地优良产品。因土质和气候的影响,这里产出的高山文冬姜,所含的6-姜酚含量较高,代表高山文冬姜对人体的功效也比较高,其味道则比其他的姜无论是辛、香、芳、辣味都较浓烈。

 

庄主亲自参与研发,每一个产品都由庄主亲自监督制作,时到今日已出产超过80种由不同的姜品种制成的产品,希望能够把姜里的独有的热源和健康带给大家。借此也希望张洪能够一起成为马来西亚独一无二的伴手礼,一起冲出海外市场,让更多人能够品尝到不同姜品种的魅力所在。

张洪有一兄长,人亲切唤之“老张”,年岁稍长,模样跟张洪酷似,而追求美食原味的决心有过之而无不及,千里迢迢到各地去,为的就是寻找多年逐渐消失的纯朴美味,古早味中带巧思,如虾丝卷、 番婆饼 、天然龙眼蜜等,纳入張家莊名产之一,回味乡土情怀。。。

Master Cheong – Cheong Hoong, Chinese immigrant, a 50-plus-year-old uncle nicknamed lovely Weird Old Perfectionist. With glowing eyes and a refined sense of smell and taste, he went on a culinary adventure within the country to abroad to find original culinary delights of olden days. 

 

One day he has found the premium quality of Bentong Highland Ginger and since then, is a never ending road for Master Cheong to search more what he can do from the ginger. Bentong Highland Ginger is an unique Malaysian specialty that is only available in Pahang Mountains. Due to the influence of soil and climate, the ginger produced here has a higher content of 6-gingerol, which means that it is more effective for the human body, and its flavor is stronger than other ginger in terms of pungency, aroma, fragrance and spiciness.

 

With over 80 different products made from different kind of ginger, Master Cheong personally involved in the research and development, and each product is made under the supervision of Master Cheong. He hope to bring the unique heat from different ginger and health benefits to everyone.

 

We hope that Cheong Hoong's products will able to become a unique souvenir in Malaysia, and that more people will be able to taste the charm of different type of ginger to become healthier.

Cheong Hoong has a brother, fondly called "Old Cheong", slightly older but the strong family resemblance with Cheong Hoong proclaims his identify. 老土怪庄主依据着记忆,寻找忠于原味的南洋美食,北上南下,乡镇还保有传统制做法,皆属人间至宝:文冬的高山文冬姜,槟榔屿淡汶饼,邦咯岛鳕鱼酥,马六甲榴莲糕、虾丝卷,柔佛肉骨茶,每个都是庄主品尝仔细,以上植根在梦魂滋味。

 

张洪凭着使命,继续寻找着马来西亚独有的特产,终于在寻根路途种找到了高山文冬姜,经过自己亲身一试之后就没有回头路,从此便于各种不同的姜融为一体,并从此深入研究制作成不同产品,希望能够让更多人也能够接触到此神物,寻回属于自己的体内温度。

 

《高山文冬姜》是马来西亚彭亨州独有的特产,这份只有彭亨文冬武吉丁宜区仅有的道地优良产品。因土质和气候的影响,这里产出的高山文冬姜,所含的6-姜酚含量较高,代表对人体的功效价值也高,其味道则比其他的姜无论是辛、香、芳、辣味都较浓烈。

Story of Zhang Village


Guided by his memory, down-to-earth and eccentric Master Cheong has gone on a journey to discover the authentic Nanyang cuisine which has remained true to its original flavour.

In the north and the south, there are still villages which have retained the traditional methods of making and cooking these delicacies.

The culinary treasures are the Bentong Highland Ginger from Bentong, Tambun Biscuits of Pulau Pinang, Pulau Pangkor fillet cracker, Malacca Durian Cake, prawn roll and Johor Bak Kut Teh and the list goes on.

With every bite, Master Cheong has taken time to slowly savour and find the precise ‘original' taste which defines every products.

 

Bentong Highland Ginger is a unique product of the state of Pahang, Malaysia, which is only available in Bukit Tinggi, Pahang. Due to the influence of soil and climate, the ginger produced here has a high content of 6-gingerol, which means it has a higher nutritional value to the human body, and its taste is stronger than other ginger in terms of pungency, aroma, fragrance and spiciness.

 

Therefore, we hopes to make the ginger a national treasure that is unique to Malaysia, and to make it known to more people as one of the must-have gift items in Malaysia.

"Cheong Hoong" has been a local brand since Malaysia independence in 1957, representing Chinese middle-aged entrepreneurship in that era. Cheong Hoong's products are derived from the heritage of multiracial culture and harmonious bonding, as well as a synergy of old and new savour of all time. In essence Cheong Hoong reflects traditional roots and unchanging flavours to cherish the everlasting love for the land and nation.

 

In the spirit of the most sincere passion for life, he embarked on a long journey to find his roots, and it took 10 years to finally find a unique Malaysian specialty "Bentong Highland Ginger", and it is a premium quality product, in order to be able to bring the heat needed by the body to everyone, so that our body can gradually restore health.

 

Due to the influence of soil and climate, Bentong Highland Ginger produced here in Bentong has a higher content of 6-gingerol, which represents a high value of efficacy for human body, and its flavor is stronger than other ginger in terms of pungency, aroma, fragrance and spiciness.

 

The owner, Master Cheong, is very particular about the environment in which the bentong highland ginger is grown, with clear gurgling streams and fresh breezes. 曾经,张洪发现一批购入原料的品质不甚理想,毅然拒用并将它们以堆肥处理作为改善土壤之用,而非以谋取商业利益为优先考量。张洪致力予为消费者的权益把关,因此宁愿自掏腰包进行各项非官方规定的检测,以求确保生产出消费者能够安心食用的产品。

After a successful venture as one of the prominent producers of local food brand, Cheong Hoong has branched out and embarked on advocating chemical-free green foods which does not contains any chemical substances.

 

Under the co-brand, Honest Food, he proudly presents the 100% safe organic and environmentally friendly foods. He insists that all food products must be made from raw materials harvested from sustainable farming land, and that the production process must be carefully controlled to ensure the quality of the raw materials, until they are packaged and ready for consumption.

 

These products include organic winter ginger powder, organic lemongrass powder, organic moringa powder, and natural farming ginger powder. All these products are one of its sincere products.

 

All the products in "Honest Food" are not genetically modified and do not add any preservatives, emulsifiers, bulking agents, artificial flavourings and colours, in order to provide customers with safe and healthy food.

 

He once made bulk purchases of the raw ingredients, but due to quality issue, has turned them into compost to fertilise the land instead of making a commercial gain out to them.

 

Focusing on guarding the interest of consumers, he conducted authority-unrequited test out of his own pocket so the consumers have a peace of mind while enjoying his foods.

Lao Zhang Ji - Recall the taste of homeland


Cheong Hoong's elder brother, “Lao Zhang Ji” has amassed various products which do not use chemical preservatives and flavours.

 

He went to neighboring countries until he found simple, down-to-earth and traditional culinary delights which have preserved their original flavours. Thus, by doing so “Lao Zhang Ji” has become a heaven for traditional food which has preserved the original flavours of yesteryears.

 

With the same philosophy as "Cheong Hoong", we want to let more people feel the strong flavor of the countryside, Cheong Hoong and Lao Zhang Ji work together to bring you the most natural flavor, reminiscent of the purest local sentiment.

We focus on bringing together well-known specialties from different places, hoping to bring back the roots of diverse ethnic flavors, and to develop and promote traditional local products, and share with you the eternal taste of this tradition.

 

Lao Zhang Ji also does not forget the original intention, in order to respond to the traditional culture of Chinese New Year, we will launch the New Year cake only in the New Year at a specific time, in order to let more people do not forget these traditional culture and food.

文冬姜,一个在马来西亚到处都听过人家说的姜品种,甚至远至外国的朋友都听过这个只有马来西亚拥有的姜品种。那为什么张洪一直在强调我们卖的是【高山文冬姜】而不是普通的文冬姜?张洪又是如何遇到这么珍贵的【高山文冬姜】呢?

 

已经开业了15年的莊主老龟毛张洪,为了找寻更多本地土产带回给顾客品赏,在2008年的时候误打误撞地来到了位于彭亨州文冬的这片土地,看到了当地几乎全部人都是卖姜的,就引起了老龟毛的好奇心,决定一探究尽文冬姜到底有什么魅力所在。

 

莊主特地拜访当地的农民,才知道原来姜可以分为很多种类,在文冬为名的就是其中一种。虽然都是文冬姜,但还是会被当地人区分为高山文冬姜还是普通的文冬姜,而且两者价格相差极远。

 

 

 

莊主相中这片高山文冬这片高地耕种出来的高山文冬姜。这里的姜以高山泉水灌溉姜田,蚯蚓在黄土之下集体生活、繁殖、松土,除了促进肥田效果,也有助于土壤透气,使文冬姜得以健康生长!而且因土质和气候的影响,这里产出的高山文冬姜,所含的6-姜酚含量较高,代表高山文冬姜对人体的功效也比较高,其味道则比其他的姜无论是辛、香、芳、辣味都较浓烈。

 

 

 

莊主非常坚持文冬姜的种植环境,因为要做就要选到最好的高山文冬姜给我们的顾客。而且在耕耘栽种的过程中,莊主对每项要求和条件都是关键:
1.  特选高山文冬姜品种,肉质丰硕肥美。
2.  种植在 > 海拔600公尺的斜坡,通风透气、排水良好。
3.  栽种在文冬武吉丁宜地区、山高林密的优质环境里,高高提升了姜的品质。
4.  耕地远离高压电线,避免电磁辐射。
5.  采用天然山水灌溉,并且致力打造安全的自然生长空间,因此高山文冬姜的姜辣素的成分高,辛、香、芳、辣味较浓烈,色泽较深,营养价值高。
6.  对土地友善耕作,优良的生长条件使得品质备受肯定。

 

 

 

在高山上种植本来就有一定的危险,加上因为种植姜的需求一定要在排水良好的45度斜坡上,所以员工们每次上山巡视或采集时都要万分小心,因为有些斜坡还大于45度,一不小心脚滑就会跌倒几百公尺高的山底,一定要步步为营才可以。

 

而且每次收集张洪高山文冬姜的时候都非常佩服那些壮汉们,因为每次收集一箩最少都有110公斤以上,这些壮汉每次都靠着一个布条绑在箩,然后靠着自己的头部和颈的力量撑起整个箩,慢慢一步一步把整箩的高山文冬姜运到斜坡下的车上。这些全都考验着壮汉们的体力呀!

 

 

 

每次看到这些农民们都觉得幸苦了他们。他们需要每天爬上超过800公尺的山坡上,而且有时候天还没亮就已经要赶去挖姜,面对黑漆漆一片的山坡他们也无从害怕过。

有时候种植时农民们不但要在烈日当空的山坡上除草挖洞工作10个小时,山坡附近又没有遮挡阳光的地方,农民们只能靠着穿长袖和戴帽子来避免自己被晒伤。这些都是考验农民们的毅力和耐力啊!

 

 

 

我们莊主非常在意种植的环境和当地种植的情况,所以每隔一段时间莊主都会亲自上山巡逻当时的环境,顺便和农主们交流以便了解农主们有遇过什么样的种植问题能够尽量一起合作解决。

 

曾经,莊主发现一批刚采收的高山文冬姜的形状不一样,而且闻起来不香又不辣,问了农主才知道因为连续下雨1个月排水问题一直没有改善所以严重影响了姜的味道,过后莊主毅然拒用并将它们以堆肥处理作为改善土壤之用,而非以谋取商业利益为优先考量。

 

张洪致力予为消费者的权益严谨地把关,因此每一年都宁愿自掏腰包进行各项非官方规定的检测,以求确保生产出消费者能够安心食用的产品。
